When the sun shines in west Wales, you absolutely have to grab the moment, and what better way to do that, than with a frozen daiquiri cocktail?
The original daiquiri was a simple concoction of sugar lime and rum over ice, served up in a tall glass in the bars of Havana from the very end of the 19th Century. As with all good things, the Daiquiri has been taken in lots of different directions. The 'frozen' version sings of summer in a glass (with no one letting anything go...) and came into being with the invention of the electric blender around the 1930s. Crushing up ice (or, in this case, frozen mango) brings a slushy like vibe to the Daiquiri cocktail, and allows for the introduction of different flavours if, like us, you use frozen fruit instead of ice.
Our Black Batch Rum is the starting point for this particular serve, along with Cointreau, orange and mango juice and lime. It needs nothing more than a quick whizz in a blender, and you can be out on your lounger enjoying the sunshine in no time!
Black Batch Rum Frozen Mango Daiquiri
200g frozen mango chunks
50ml Black Batch Rum
25ml Cointreau
150ml Orange and Mango Juice
Juice of 1 lime
Lime slice to garnish
Add all the ingredients to a blender and whizz together.
Pour and scrape into a coupe glass and garnish with a slice of lime.
