The sour is one of the simplest cocktails to make - use the formula two parts spirit, one part 'sour' (a citrus juice is a great example) one part 'sweet' as your baseline and go from there, adjusting to your taste.
In this Spiced Rum cocktail, we have taken our Spiced Black Batch Rum and played around a little with the classic 'sours' ratios. We added in a dash or two of bitters for added complexity and an egg white to bring a smooth mouthfeel (and that irresistible foam) to the drink.
It looks amazing in a coupe glass garnished with a pineapple leaf and a slice of lemon (we dehydrate ours), and tastes divine.
Black Batch Rum Pineapple Sour
40ml Black Batch Rum
30ml Pineapple Juice
15ml Lemon Juice
20ml Sugar Syrup
2 dashes Bitters
1 Egg white
Add all the ingredients to a cocktail shaker.
Dry shake (without adding any ice).
Add ice and shake again.
Strain into a couple glass.
Garnish with a pineapple leaf and lemon slice
