When the sun is out, who doesn't love a Spritz?

Inspired by the Italians' love of something light, frivolous and easy drinking, the original spritz was simply a duilution of wine with soda water. As time went on, almost inevitably, the formula was expanded. The principle of 'spritzing up' alcohol extended to bitter aperitif type alcohols, and more recently, to cover a wide range of spirits - including gin.

Our Pembrokeshire Pinky Welsh Pink Gin is the perfect spirit for a gin-based Spritz. When the weather is warm, it works with classic Aperol - but if you're after something more obviously summery, you could try this Pinky Cherry Spritz. 

 

Pinky Cherry Spritz

(serves 1)

Handful of cherries 

50ml Pembrokeshire Pinky Welsh Pink Gin

15ml lime juice

10ml sugar syrup

Prosecco

Cherries and Fresh lime slices for garnish

 

Add the cherries and the gin to a cocktail shaker and muddle (crush up together - if you don't have a cocktail muddler, you can mash the fruit and gin with a fork)

Add the lime juice and sugaer syrup.

Add some ice cubes and then shake well to combine and chill.

Add fresh ice to a large wine glass, then strain the chilled cherry/gin/lime combination in over the top.

Top up with prosecco and garnish with a slice of lime and the remaining cherries.
